The texture of the tsukemen’s noodles is perfect. The more you eat, the chewier and more delicate they become. The bounce of the noodles is akin to the chewiness of udon. The broth pairs really well with them. A slightly tangy taste is just right. The pork-based broth exudes a deep, savory flavor. It’s not heavy. While being sweet, it goes wonderfully with rice. It’s the kind of ramen that sits comfortably in your stomach even when eaten in the morning. To enhance the flavor, try dipping the noodles in the broth, then wrapping them in seaweed before eating. Around halfway through, it’s recommended to add lime to the broth for an extra kick of tanginess. When you’re done with the noodles, roll the remaining rice into seaweed and enjoy.
