The crowd mainly consisted of young folks, both inside and outside the restaurant. It’s a bit of a trek from Gyeongseong University, but with seating for about 24 people, turnover is pretty quick. Just make sure to check their closing hours before you go.
I opted for the tenderloin cutlet because I’m all about that melt-in-your-mouth tenderness. Their pork cutlet is aged for about 300 hours, resulting in an incredibly tender texture that practically disintegrates with the slightest touch of your chopsticks. The tempura batter holds together perfectly, and with each bite, the juices just keep flowing. It’s hearty and satisfying, so you’ll be feeling full in no time.
Start by enjoying the pork cutlet with some Himalayan pink saltโthey serve it up saltier here, which pairs beautifully with the crispy, light pork cutlet, allowing you to savor its original flavor. Then, add a dab of raw wasabi for a refreshing kick to cleanse your palate. After a few bites with salt, finish off with the pork cutlet sauce.

This phenomenon occurs in fresh meat when the myoglobin component reacts to heat, resulting in a bright red color. According to the owner, it’s at its most delicious state, so dig in with confidence.
